Starting Point for flooring

Thank you for providing your knowledge and skill!
Would you be able to review my flooring plan and let me know if the starting point would be my best option? I have based it off using the hall way as the centre line. The blue lines indicate where I would need to work backwards.
I am planning to use quarter round to finish and will undercut in door ways.
I am working on a concrete slab so have decided to not use any underlayment as we do not have products you recommend available in Australia that are readily available.

One more question, if i wanted to use quarter round at both entries but it is lined with a metal transition trim then ceramic tile; is there a way i can adhere the quarter round to the metal without drilling?

Also when using SPC flooring in kitchen area how do I go about with ensuring water does not go under flooring at expansion gaps? We are planning to use quarter round on all edges but want to try to avoid moisture from kitchen use getting under flooring. Your advise would be greatly appreciated. Thank you & God bless you!
